This number represents the percentage of chromium and nickel in the material: 18% chromium and 10% nickel. Chromium is very sustainable and corrosion resistant. It is what prevents the steel from rusting. The nickel ensures that the pans retain their shine and don’t become dull.
These 18/10 Fissler pans are ovenproof, up to 230˚C. They are also dishwasher proof.
## Remarkable lid from Fissler Original Profi Collection pans
One of the most remarkable features of the pans is the lid. It is a little ‘dented’, so it falls back into the pan a little. In addition, the lid is extra heavy and will properly close of the pan. All these features serve the same purpose: the condensation will fall back into the pan. As such the dishes you prepare inside will become extra juicy. Fissler calls this the condensation plus system. To speed up the condensation process you can put ice cubes on the flat lid as you prepare your meals.
This set comes with 4 lids. The lids of the pans with the same diameter can be exchanged. The sauce pan does not have a lid, but for it you can use the lid of the 16 cm cooking pot.
Why doesn’t it have a lid? Traditionally this pan is used to boil water or milk. You don’t need a lid for this. For milk, it would even get in the way, because the chef wouldn’t be able to see if the milk was boiling. Today we have gotten used to the fact that the sauce pan does not come with a lid. This, however, differs per country. If, for instance, you order a pan set from an English supplier, you often do receive a lid.
## Unique CookStar base
One of the unique features of the Fissler Original Profi Collection pans is the CookStar base. This is a base that is only developed by Fissler. It is comprised of multiple layers of steel. The base absorbs, divides and stores the heat well to make sure it heats up evenly.
Because of the CookStar base the pan can be used on any cooking hob. You can also change the heat source without the base bending.
