You can stack hot coals on top of the lid, or turn the lid over and use it as a baking dish. For high heat simply place the pan on top of hot coals. Because of the feet it will always be at the right height. Do you prefer slow cooking? If so hang the pan over an open flame using a tripod! The cast-iron retains the heat well and perfectly distributes it.
## Maintaining your lodge pan
As the pan is produced it is treated with vegetable oil based on soya. As a result you end up with a natural non-stick coating. And each time you use a Lodge pan, this non-stick coating will only become better. Maintaining it, however, is very important. Clean the pan after use with water and a little bit of detergent. It is not dishwasher proof. If there is still some left-over food sticking to the pan, scrape it off with a [pan scraper.] Having trouble removing the left-over food? Simmer a little bit of water in the pan for 3-5 minutes. Afterwards you can easily scrape out any left-over residue. Properly dry the pan after cleaning it and add a small layer of [oil] to the pan. Always make sure you store the pan in a dry place. Otherwise it can start to rust!
