The Lansky Masters Edge is a practical, easy to use sharpening system. Both for sharpening and maintaining your knives. The sharpening system can be used for (almost) every type of knife, including serrated knives. In a short time you restore a razor sharp edge on your knives.
**How to use the Masters Edge Sharpener**
**Step 1:** Place the knife sharpener on a sturdy, flat surface. Make sure that you have a comfortable working height.
**Step 2:** Fold away the hand guard place the two grey, medium grit ceramic steels in the intended holes in the base plate. You place the steels dependent on the angle which you want to sharpen (17, 20 or 25 degrees).
**Step 3:** Take the knife in your hand and place the back of the blade at the top of the sharpening steel. In order to start sharpening, you move the knife down along the ceramic steel. Pull the knife slowly toward you, to make sure that you sharpen the entire blade. This movement is most like cutting bread. Always keep the knife at a 90 degree angle. To sharpen the other side of the blade, you use the other sharpening steel. In most cases, you knife will be sharp enough after moving it 10 to 20 times along the rods. If your knife is very blunt, you may need to use a little more time than that.
**Step 4:** Replace the grey medium steels for the white, fine ceramic steels. This polishes the knife until it’s razor and razor-sharp. You use the same technique as described above.
To remove any burrs, you can first sharpen the knives at an angle of 20 degrees, followed by sharpening at an angle of 25 degrees. This doesn’t only decrease the burrs, the edge will also last longer. If your knives only need a little touch-up, just sharpening on the white steels will suffice.
